Raspberry Cobbler
1/2 cup butter
4 cups of fresh or frozen raspberries or blackberries or any berry!
1 cup sugar, plus more for spinkling
1 cup plain flour
2 teaspoons baking powder
Pinch of sea salt
1 cup milk
1 teaspoon pure vanilla extract
Preheat oven to 180c. Melt butter in large cast iron fry pan or you can use a large cake tin. Pop it in the oven to heat up and to melt the butter.
Place your berries in a large bowl. Gently squash your berries with the back of a spoon to release their juices. I didn't need to do this as my berries were frozen, they come out all squished anyway. If they're a bit tart, sprinkle a little sugar.
Grab a large bowl, whisk together flour, baking powder, and salt. Add 1 cup sugar, milk, and vanilla extract; mix well until combined. Remove fry pan or cake tin from oven, pour melted butter into flour mixture; stir to combine. Pour mixture into fry pan and then add berries and their juices to the centre.
Pop the fry pan back into the oven and bake until top is golden brown, use a cake tester to check if cooked - approx 1 hour.
