Honey Caramel Popcorn
5 tablespoons olive oil
1/2 cup of popcorn
salt
125gms butter
2 tablespoons honey
1 cup caster sugar
1 cup pecans, chopped
Add the olive oil to a heavy base pot, once it's just heated place 2 or 3 of the popping corns into the pot, if it starts to pop then it's ready, don't let your oil get too hot. Place the rest of the corn into the pot and put the lid and start to swirl pot around, until you can't heard any more popping. Now at this point just check through your popcorn to make sure it's all popped. Mine didn't the first round, so I popped it back on the heat for a little and swirled the pot again, then add salt.
In a small saucepan melt the butter, honey and sugar, stir until the sugar is dissolved and the sauce is a lovely caramel colour. Add your chopped pecans, stir in.
Grab a baking tray and cover with baking paper, tip your honey caramel popcorn onto the tray, spread out and wait to cool. Once cool break into chucks and enjoy.
